Anyone know the Mad Mex Original Salsa recipe?

Mad Mex is a "Mexican" restaurant in the Pittsburgh region and they have some really good stuff - and I LOVE their Salsa. Visually, it would apprear that it only consists of diced tomatoes and cilantro. However, it has hints of garlic (probably powder form) and some element of heat - and I cannot figure out what they are using, becuase you cannot see any indication of peppers.



If any of you worked as a Mad Mex food preparer, could you please give me the ORIGINAL salsa recipe?Anyone know the Mad Mex Original Salsa recipe?
Serves:



A party of 15-20 (possibly more)



The recipe is easy to cut in half for smaller batches.



Ingredients:



2 lbs of roma tomatos, seeded and chopped roughly



1/2 of a medium red onion, chopped



Juice of 3 limes



1 can chipotle peppers in adobo sauce (seed the peppers for a more mild salsa)



Small handful of fresh cilantro (including stems, they have great flavor)



Tools:



Blender or food processor



Knife



Cutting board



Preparation:



Chop all ingredients roughly.



For a more mild salsa, seed the chipotle peppers.



Combine half of ingredients in blender, blend until smooth.



Check the heat level of the salsa. To increase the heat, blend in more peppers, to decrease, blend in more tomatos.



Once you get the heat level where you like, pour this half of the salsa into a bowl.



Add the remaining ingredients, but only add half of the remaining peppers.



Slowly add the peppers until you get to your desired heat level. I used only about 3/4 or 4/5ths of the can by the end for a medium/hot batch.



Mix the first and second batch together to get an even flavor.
