If you started a Pittsburgh food tour, what restaurants would you include?

Primanti's, The Original for fries, That's all I can think of for now.If you started a Pittsburgh food tour, what restaurants would you include?
I would include local restaurants that have been around for a while and have some history with Pittsburgh. If I were organizing a food tour, that's the first thing I would look into. Secondly, I would have a variation in restaurants i.e. Italian, Greek, Chinese, Mexican, Thai..... A good assortment of restaurants.



Since I'm not from Pittsburgh, is there a food or dessert that is special to the city? Or the city is known for? If there is, I would include that in the tour.
